Egg Muffins

Egg, bacon toast muffins

Modifications:  I chopped the bacon up, rather than use whole strips, we also threw in some slightly sauteed spinach to add some veggies. Also, not wanting to waste pieces of bread, I used a half slice of bread in each muffin tin, rather than cutting a circle out of 6 pieces.

Time to table: 20 minutes prep, 20 minutes cook time

Servings: 6 eggs worth

Notes: This was a great way to use up some eggs and bacon that we had leftover from other recipes. I was surprised how little spinach and bacon fit inside the muffin tin, so I chopped up a bit too much spinach. Annie flipped out over this meal because she didn’t want the eggs touching anything else. Ah, the rough life of a toddler 🙂

Veggie Pizza

Modifications:  Couldn’t find a “soft garlic herb cheese”, so just used mozzarella. Spread roasted garlic on the crust instead of using the garlic infused oil.

Time to table: A million hours, it felt like. Pizza is supposed to be fast and easy. This one was not. Or it wasn’t FAST, I guess nothing was particularly difficult, but that’s only because I have a mandoline. If I had to chop all those veggies by hand? No thanks.

Servings: We made 2 and it served 6 adults and 3 toddlers.

Annie: Like (the crust and cheese at least. I told her to eat the toppings too, and she took the veggies off and said “there’s still toppings on there!” Sigh.)

Notes: As I said above, this just took really long. Quite the putzy recipe for pizza, but it WAS really good, and quite the beautiful pizza if I do say so myself. It was fun to prepare and all, so I still liked it but this certainly wouldn’t work well as a fast weeknight meal unless you had everything prepped in advance. I’ve said this before, but I do just love that pizza dough recipe – turns out great every time and is so easy!

Burrito Bowls

Burrito Bowls

Recipe:

Chipotle cilantro lime rice: (I got the recipe from a website, but I cannot remember where, apologies)

Long grain brown rice, cooked according to directions

When the rice is done, add 1 T of butter, 1 T of lime juice, and 1/4 cup of chopped cilantro. Stir to combine.

Burrito bowl filling:

This was an ad-lib on our part, we intended this meal to simply use up some staples we had at home:

  • 2 boneless, skinless chicken breasts
  • 2 cans black beans
  • 1 cup of frozen corn
  • 4 green onions, diced
  • 1 onion, diced
  • 3 cloves of garlic, diced
  • guacamole to taste
  • cotija/cheddar cheese to taste
  • salsa to taste
  • various seasonings
  1. Saute the chicken in a skillet. Remove and dice into bite sized pieces
  2. Saute the garlic, onion, green onion until translucent
  3. Add salt, pepper, oregano, paprika, chili powder, cumin, red pepper to your liking
  4. Add the black beans, corn, and chicken back to the pan until warmed through
Spoon some rice into a bowl. Top with the black bean mixture. Top with salsa, guacamole, cheese, as desired. Mix it up and enjoy.

Time to table: 1 hour

Servings: 6 adult dinners

Notes: For a meal that was planned last minute, this was amazing. We had our friends Maggie & Pat come over, and Pat made some guacamole for us, which certainly enhanced the meal quite a bit. There was enough leftovers for Erin to bring for two lunches.

Corn Chowder

Modifications:  I pureed the soup a bit at the end with our immersion blender as we prefer thicker soups. I also doubled the recipe so there would be leftovers for lunch.

Notes: We used some corn that we bought at the farmers market for the soup and the corn was………not good. The kernals were very chewy which made the soup unpleasant to eat. This is not a knock on the recipe, just our ingredients. Erin didn’t care for how spicy the soup was, and much prefers the chowder we’ve made in the past.

Spicy Kale Lasagna

Modifications:  I used the kale from the garden for this, but I was sorely light on the kale, so I cut the recipe in half and used an 8×8 pan. Still PLENTY for a dinner.

Notes: We’ve made this a couple times now, and we totally love this recipe. I was skeptical about a non-meat lasagna the first time, but I nearly prefer this to our normal meaty recipe. What it lacks in meat, it makes up for in cheese. Annie has disliked/liked/loved this on different occasions, as toddlers are wont to do.

Chicken and Sausage Gumbo

Chicken and Sausage Gumbo

Modifications:  I used boneless skinless thighs, and only 1 pound. I also didn’t have time to simmer for as long as she indicates, so the first simmer was about 45 minutes, and the second was probably only 20 minutes, but I added a bit less liquid so it would be thicker.

Time to table: Well, as directed, it would take about 3+ hours. For me it still took nearly 2 hours from start to finish since it always seems to take me awhile to chop a bunch of veggies.

Servings: Tons, and she mentions it freezes well. We took leftovers for lunches for a few days.

Notes: I really wanted to try something with okra, since I’d never had it before. This was definitely tasty, but for me was not at all worth the effort it took to make it. I do enjoy a nice long involved meal on a weekend, but when I take the time, I want it to be awesome – perhaps it’s because I didn’t follow all the instructions, but really I think I just don’t like this type of meal as well as one that includes some form of cheese 😉

Summer Veggie Quinoa

Modifications:  We used broccoli instead of asparagus, and did not use the spinach. Also added more gruyere than it called for.

Time to table: About an hour – Ben made this and said it was a bit involved for a weeknight meal, but oh well.

Servings: Would easily serve 6 adults. We got 3 lunches out of it in addition to the dinner we had.

Annie: Like (especially the quinoa and broccoli, as usual, not so much a fan of the tomatoes)

Notes: This was surprisingly good and filling – I’m not always a huge fan of quinoa, but I really liked it in baked form and with the cheese, it had a great flavor. I wish we would have added the spinach, but with the amount of broccoli we had it seemed like it would have been too much – but I was wrong!

Grilled Corn Salad

Grilled corn salad

Recipe:

Ingredients:

9 ears of corn

2 cans black beans, rinsed and drained

2 red peppers, chopped

1 orange pepper, chopped

1 bunch green onions, chopped

Some chopped cilantro (Served on the side due to both of our mother’s distaste for the herb)

Dressing: Juice of 2 limes, some olive oil, some cumin, salt & pepper, whisked together

Directions: Grill ears of corn (pull husks back, remove silks, grill until charred), then cut corn kernels off the cob. Combine all ingredients and serve cold or at room temperature.

Time to table: 20 minutes, plus grilling time

Servings: ~15 people as a side dish

Annie: Like (as in, she ate some, although she did say “I don’t like this salad” but she also sometimes says “I don’t like bread” so we know THAT’S a lie)

Notes: This was inspired by my coworker Sharon’s corn salad that she brought to a work potluck. She is a great cook, so I asked her for a recommendation for a corn salad to go with pork tacos, and she recommended some modifications to that recipe that she uses for more of a Mexican flavor. For being kind of thrown together, and not from an actual recipe, I was impressed with how well it turned out! It paired excellently with the pork tacos.

Salmon Salad with Strawberries

Strawberry Salmon Salad

Modifications:  Once again, used red white vinegar instead of white for the dressing. We just used one fairly large salmon filet, and broiled it instead of grilling. We did top with feta since we had some on hand.

Time to table: 30 minutes

Servings: 3 adults, 1 tiny toddler portion (but none of them were too big – we were anticipating 2 adults, but my sister stopped over so we made it work)

Annie: Like (all elements other than lettuce at least, and especially loved those almonds)

Notes: This was yet another great summer meal, and bonus points because it’s super quick. We served this with some bread. I really like entree salads sometimes, Ben isn’t so much of a fan, but even he enjoyed this.

Modifications:  Didn’t have white wine vinegar, so used red wine vinegar instead for the relish. Just now realized that I forgot the scallion in the relish. Didn’t notice.

Time to table: 30 minutes

Servings: Hmm, there were far too many corn cakes for the 3 of us, but only just enough relish. Ben had the leftover cakes with salsa and sour cream. To serve 4-5 adults, I’d double the relish recipe.

Notes:  We all really liked this far more than expected! A great summer meal for hot days.
