Notes: We actually had some fontina cheese for this, though we had to cut some mold off of it :) The carmelized onions and mustad were awesome additions to the grilled cheese, I’ll certainly be adding those to grilled cheeses in the future. The tomato soup we had was just so-so, from box at the store. I haven’t mastered the technique to make a grilled cheese that actually melts the cheese in the middle without burning the bread on the outside. Oh well, just more opportunity to try it out!

Notes: This was amazingly easy and delicious, hat tip to Bill for making this and twitting about it. I think I’ll be making this frequently as it is SO damn easy. Next time I will either grease up my hands, or use gloves and grease the gloves as it makes a total mess on your hands. I used a honey weiss as my beer and even though the recipe says a hoppy beer didn’t come out as well, I’m going to make this at work soon with a summit, just to see for myself.

Tortilla and Black Bean Pie

Black Bean Tortilla Pie

Modifications: Used whole wheat tortillas – and the ones we got (Mission 100% whole wheat “soft taco”) were EXACTLY the perfect size for my 9” springform pan so that was awesome. I used water instead of beer – I’m sure the alcohol cooks off, but it feels weird cooking with any alcohol for a pregnant woman and a toddler… so yeah, just water. I added some additional seasoning – Penzey’s Adobo seasoning. Also added a chopped green pepper to the onion/garlic/jalapeno mix to up the veggie content.

Time to table: 30 minutes active, 20 minutes baking

Servings: 6 adults

Notes: We are on a ROLL with the triple love meals over here! I knew this one would be a hit – we have loved it all the other times we’ve made it and this was no exception. I forgot to add sour cream and salsa to mine but it was still quite good even without that. We even had this on a weeknight and Annie devoured it – proving that it’s a keeper!

Modifications:  I didn’t put any seasoning inside the bird and I grilled this inside an aluminum pan, which turned out to be a good idea because it tipped over halfway through cooking.

Time to table: 20 minutes prep, 2 hours grill time

Servings: Two adults, one toddler, with about four cups leftover shredded chicken.

Notes: This is Erin’s favorite “plain chicken” recipe, so it got a rare “love” from her. We put the asparagus in foil and cooked that on the grill with some lemon juice.

Modifications:  Used a little less chipotle pepper than called for and I used crushed tomatoes instead of whole.
