Notes: These are probably my favorite pancakes ever – too bad I am NOT good at flipping pancakes and they somehow all got burned on the outside but not always quite done on the inside. That’s why I like waffles – my waffle maker tells me when it’s done :) These are not exactly quick pancakes since they involve beating egg whites and dirty quite a few dishes… but they are tasty. So it’s not like this is truly a “quick” breakfast for dinner meal, but I guess it’s quicker than a lot of other involved meals.

Notes: We are coming around more and more to breakfast for dinner – mainly because it’s guaranteed to be well liked by Annie and is usually really easy. This is an excellent basic french toast recipe – I’ve never actually made french toast in my life, so it was high time I start! Unsurprisingly, we all LOVED this. I used french bread, and served with sausage and strawberries. You know something is good if Annie will even eat some of it when strawberries are an option.

Modifications: No modifications – I went with Eating for England’s waffle recipe because it included cheese, and why wouldn’t I want that?! I forgot fresh parsley, so just used dried.

Notes: I really loved how easy this meal was! Annie LOVES helping (almost too much) and especially loves helping with waffles. She greatly enjoys watching the light go from orange to green when the waffles are done. This was a super quick weeknight meal (that we made on a weekend, but every meal needs to be quick with a newborn and a toddler right now!). Great for a savory breakfast, or breakfast for dinner. We used our homemade salsa for this.

Modifications:  I didn’t have any tomatoes, so I just used more asparagus. 3 eggs didn’t seem like enough, so I used 4. It would have been enough though, so just stick to 3 unless you want more than one mini-muffin pan.

Time to table: 10 minutes prep, 15 minutes to bake

Servings: 12 mini-muffin sized frittatas

Notes: I have made it my life’s mission to get Annie to voluntarily consume asparagus. She didn’t eat much of it, but she did pick up a few bites and put them in her mouth on her own for the 2 meals when she had these. That was enough of a win for me. She might have liked them better with tomatoes in there too.We had gotten the asparagus from the farmers market the day before, and I chopped it up tiny to increase the changes of Annie eating it.

These totally stuck to the mini muffin pan, despite a liberal spraying of olive oil, so grease the heck out of them.

Modifications:  I doubled this, since we were feeding 6 – we’ve made the original recipe twice and it is JUST enough for 4 adults and 1 toddler. We had a few leftovers. I used: red pepper, broccoli, red onion and corn for the veggies. I chopped the veggies REAL small to try to get the maximum amount hidden into each bite since Annie has the habit of picking out the egg and bread pieces and leaving the vegetables.

Notes: This is a really good basic breakfast casserole recipe that you can change to suit your fancy. I also baked Lemon Blueberry Scones to go with these.

Recipe:

  • 4 strips bacon
  • 1 cup diced sweet potato
  • 1 small diced red potato
  • 4 diced cloves garlic
  • 1 cup shredded cheese

Dice the bacon and cook in a fry pan. Remove the bacon and set aside. Cook the sweet potato and potato in the bacon grease until nearly done. Add the garlic and the bacon for the last 1-2 minutes. Top with the shredded cheese and let it melt together.

Time to table: 30 minutes

Servings: 2 adults, 1 toddler

Notes: I soaked up some of the bacon grease with a paper towel. This is, again, one that can be made with whatever veggies you have around. We also sometimes top the hash with a fried egg, just didn’t feel like it today. This is also a lunch item for me, easy to throw together quickly.

Spinach & potato frittata

Recipe:

  • 6 eggs
  • 1.5 cups of diced sweet potato
  • 1 diced red potato
  • 4 cloves garlic, diced
  • handful of baby spinach
  • 1 cup shredded cheese
  • salt and pepper

Beat the eggs with salt, pepper, and the cheese, set aside. Sautee both kinds of potatoes in a cast iron skillet with olive oil until nearly done. Add the garlic for a minute. Add the spinach until lightly wilted. Pour the egg mixture in and stir until mixed in. Let it sit on the stove for 4-5 minutes on medium-low heat until the eggs begin to cook through.

Turn the oven broiler to low and move the skillet into the oven to broil the top of the frittata for 3-4 minutes. Take out and serve.

Time to table: 30 minutes

Modifications: You could really use any vegetables you have on hand as well as bacon or sausage.

Servings: Perfectly fed two adults and one toddler.

Notes: Erin insisted I include the third picture of our recently cleaned house. Annie and I are clearly confused that she is taking photos instead of eating with her family. The frittata paired well with my Summit EPA. (Note from Erin: this meal was my idea, even if Ben was the one who executed it)

Spinach and Fruit Smoothie

Recipe:
This is more of an idea than a recipe. The main components are yogurt, fruit, and spinach. Banana seems to mask the spinach best of all, so that’s always included in our smoothies.

2 bananas
1.5 cups frozen fruit (strawberries, mango, blueberries, etc – the pictured smoothie had mango)
1 cup yogurt (typically we use full fat plain greek yogurt)
1/2 cup of water/milk/half and half/apple juice – we use water
2 Tablespoons ground flaxseed
2 large handfuls baby spinach

Place all ingredients in a blending device. An immersion blender works particularly well for this. It works best to blend in spinach a little at a time.

Time to table: 5 minutes

Modifications: Again, this is not a recipe and can be modified to suit your individual tastes.

Servings: 2 adult smoothies (tall glasses) and one toddler smoothie pictured above.

Notes: As you can see, Annie sucked this down like it was candy. She is normally pretty good about eating vegetables and will for sure eat fruit, but this is a GREAT way to get your kid to eat more vegetables. I’ve heard of people adding carrot and other veggies too. I’m not a huge proponent of “hiding” veggies, but hey, whatever works. A bonus of these smoothies is that I can start my day off with this and then eat like crap the rest of the day and still feel like I got a good start.
