White Bean Chicken Chili

Crockpot White Bean Chili

Modifications: We used chicken thighs instead of breasts because they’re cheaper. We also threw in some onion, celery, and garlic to add some veggies.

Time to table: 30 minutes prep, 6 hours cook time.

Servings: Dinner with the neighbors and two lunches

Notes: This chili was awesome and incredibly easy. I chopped up the veggies the night before so in the morning I just had to dump everything into the crockpot and turn it on. We brought this next door to eat with the neighbors and still had plenty leftover for our lunches, even after having second helpings for dinner.

Notes: This soup is incredibly easy to make and tastes excellent, perfect for winter weekday dinners. We made the rice separate this time, per the update to the original post. Making the rice separately was nice for leftovers as well, as you could make fresh rice to go with the soup for lunch. Annie particularly enjoyed crushing the chips into her soup :)

Squash and Bacon Macaroni and Cheese

Time to table: About an hour prep, 20 minutes baking time

Servings: At least 6 adult servings – it fills a 13×9 pan

Notes: This was a delicious mac and cheese – I can’t ever decide if I prefer stovetop or baked mac and cheese, so I’ll continue to try many versions to find out :) I do like when mac and cheese has SOME vegetables in it to make it seem slightly healthy, and squash is perfect because it basically blends right in with the flavor. This one did take quite a while, so it wouldn’t be a good weeknight meal unless prepped in advance.

Notes: This is a super simple, quick pasta dish – we’ve had it in the past and it’s always a hit. Can’t go wrong with a bunch of cream and cheese!

Modifications: I knew I wanted a thicker soup, so in addition to the onion, I added:

  • 3 carrots
  • 3 celery stalks
  • 2 small potatoes
  • an extra 2 TB butter
We also topped the soup with green onions, cause why not?

Notes: We made this soup a couple years ago, and I can say that it was much better with the added vegetables, and healthier I suppose. I cannot express how good this soup was, you should make it youtself and find out. We baked a baguette from New French Bakery and it was awesome, as usual. Amazingly, Annie loved it as well and even asked for seconds (accompanied by a second piece of bread, obviously).

Chili Macaroni and Cheese

Modifications: I added a lot of sour cream since I was using 2% milk and because sour cream is delicious, and I think I used too much pasta so I added more chili and cheese to compensate.

Notes: Again, this was so easy – I LOVE the concept of using leftovers to make a slightly different meal. We will definitely be trying this more! We all loved this meal in both forms – Annie probably enjoyed it a bit more here – mostly she just picked out each noodle though :)

Notes: We are coming around more and more to breakfast for dinner – mainly because it’s guaranteed to be well liked by Annie and is usually really easy. This is an excellent basic french toast recipe – I’ve never actually made french toast in my life, so it was high time I start! Unsurprisingly, we all LOVED this. I used french bread, and served with sausage and strawberries. You know something is good if Annie will even eat some of it when strawberries are an option.

Modifications: We used an entire chopped red pepper and a whole onion too. This was split into 2 portions, each in a 8×8 pan.

Notes: This is one of our freezer meals – I’ve blogged about it on my other blog several times but it’s never been featured here. It’s a big hit around our house. I think it would be good with different veggies in it too – maybe some chopped broccoli instead of the pepper.

Broccoli recipe: 1 head of broccoli tossed with olive oil, salt, pepper, and parmesan cheese. Roast at 425 for 20 minutes.

Mashed potatoes recipe: Quarter the potatoes and boil them until soft, mash with butter, sour cream, and cream.

Modifications: We used turkey thigh instead of beef, and added garlic, shredded carrot, and only used 4 strips of bacon.

UPDATE 4/30/12: Made this again last night and wanted to document what I thought was a winning combination of ingredients:

  • 2 lbs ground turkey thigh
  • 1/2 large onion, diced
  • 2 stalks of celery, diced
  • 1/2 carrot, shredded
  • 1 jalapeno, diced
  • 6 cloves garlic, minced
  • 1 egg
  • 2 T bbq rub
  • 1/4 cup bbq sauce
  • 1/2 cup panko breadcrumbs
  • 6 slices bacon, cooked and chopped

Time to table: 30 minutes meatloaf prep, 90 minutes meatloaf grilling time. I made the broccoli and potatoes while the meatloaf was grilling.

Servings: 2 adults, 1 toddler, and several lunchs of leftover meatloaf

Notes: This was simply amazing. We made this meatloaf before using the smoker, not the grill, but this time was tremendously better. I was surprised at how tasty the turkey thighs were, and the grill cooked the garlic more than the smoker did, so it turned out better. Annie surprisingly loved the broccoli tonight and continued to ask for more off of Erin’s plate. Everything came together great in this meal, AND I timed everything perfectly so that it was all hot when we ate it. I’m pretty great, if you ask me.
