White Bean Chicken Chili

Crockpot White Bean Chili

Modifications: We used chicken thighs instead of breasts because they’re cheaper. We also threw in some onion, celery, and garlic to add some veggies.

Time to table: 30 minutes prep, 6 hours cook time.

Servings: Dinner with the neighbors and two lunches

Notes: This chili was awesome and incredibly easy. I chopped up the veggies the night before so in the morning I just had to dump everything into the crockpot and turn it on. We brought this next door to eat with the neighbors and still had plenty leftover for our lunches, even after having second helpings for dinner.

Modifications: We halved the amount of chicken from 2lbs to 1lb, just because it seemed like a lot of chicken.

Notes: This dish was meh. The original recipe calls it “barbecue” chicken, but I hesitate to use that word because it doesn’t taste like barbecue at all. We found this recipe to be oddly bland, and when we make it again we’ll for sure add more spices and salt to it. We have another bag of this in the freezer that we’ll most likely use when Erin is on maternity leave in a couple months. I DO like this method of prepping dishes though, as all you need to do is chop your vegetables, mix everything together, and freeze it – no cooking at all. We’re going to try this method with chili and see how it goes.

Annie was in a MOOD tonight and had none of this.

Crock pot jambalaya

Recipe: From Delicious & Dependable Slow Cooker Recipes, Judith Finlayson

1 lb Italian sausage

2 onions, finely chopped

6 cloves garlic, minced

1 jalapeno pepper, finely chopped

2 tsp Cajun seasoning

1 tsp dried chopped oregano

1/ tsp cracked black peppercorns

1 cup pearl barely, thoroughly rinsed under cold running water

1 28 oz can coarsely chopped tomatoes, including liquid

3 cups chicken stock

8 oz medium shrimp, cooked, peeled and deveined

1 roasted red pepper, finely chopped

  1. In a nonstick skillet, cook sausage over medium-high heat, breaking up with a spoon until no longer pink. Using a slotted spoon, transfer to slow cooker stoneware. Drain all but 1 Tbsp of fat from pan. Reduce hear to medium.
  1. Add onions to pan and cook, stirring, until softened. Add garlic, chili pepper, Cajun seasoning, oregano, salt, and peppercorns, stirring for one minute. Add barely and stir well. Add tomatoes and chicken stock and bring to a boil.
  1. Pour mixture over sausage and stir. Cover and cook on LOW 6-8 hours or HIG 3-4 hours. Add shrimp and roasted red pepper. Cover and cook on HIGH for 20 minutes, until shrimp is heated through.

Time to table: 45 minutes prep, 8 hours cook time

Notes: We made this recipe a couple years ago, but it seemed different and I think we both liked it way more this time for some reason. Annie very much enjoyed this, unless a piece of shrimp got anywhere near her mouth. That went right back in the bowl. She also enjoyed the pear she had for dessert.

Crockpot Potato Pork Hotdish

Recipe:
1 lb (16 oz) ground pork
2 cupd sliced raw potatoes
1 & 1/2 cups sliced carrots
1 cup chopped celery
1/2 cup chopped onion
1 cup frozen peas
1 cup frozen whole kernel corn
10 oz can tomato soup
1/2 cup water
1 tsp. dried parsley flakes
Salt and Pepper to taste

in a large skillet brown meat, onion, and celery. In a slow crockpot container – sprayed with cooking spray – combine meat mixture, potatoes, carrots, peas, and corn. Stir in tomato soup, water, parsley flakes, salt, and pepper. Mixed well. Cover and cook on low for 6 to 8 hours.

Time to table: 30 minutes prep, 6-8 hours cook time

Modifications: No modifications really, but I didn’t really measure out any of the vegetables, I just added what seemed like an appropriate amount.

Notes: We got this recipe from our neighbor Molly. I thought this was excellent and a great dish for weeknights as its quick enough to throw together before leaving for work in the morning and is reasonably healthy. Erin liked it fine, but wanted some sort of starch or carb to go with it next time. Annie had maybe a single bite. One of those nights.

Turkey Pumpkin chili

2 tablespoons extra-virgin olive oil
1 small yellow onion, chopped
1 green bell pepper, cored, seeded and chopped
2 jalapeños, seeded and finely chopped
2 cloves garlic, finely chopped
1 pound ground white or dark meat turkey
1 (14.5-ounce) can diced tomatoes, with their liquid
1 (15-ounce) can pumpkin purée
1 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
Salt and pepper to taste
1 (15-ounce) can kidney beans, rinsed and drained
Heat oil in a large pot over medium high heat. Add onion, bell pepper, jalapeños and garlic and cook, stirring frequently, until tender, about 5 minutes. Add turkey and cook until browned. Add tomatoes, pumpkin, water, chili powder, cumin, salt and pepper and bring to a boil. Reduce heat to medium low and add beans. Cover and simmer, stirring occasionally, for 30 minutes more. Ladle chili into bowls and serve.

Time to table: 30 minutes prep, 30 minutes simmer or 5 hours cook time in a crockpot.

Modifications: We made this earlier in the day and used a crockpot instead of cooking it on the stove.

Notes: As mentioned earlier, Annie has been a picky eater lately, so her “like” is a relative measure. Erin and I both agreed that while we liked this dish, especially the flavor of the chicken and how tender it got, we probably wouldn’t make it again, just because it wasn’t THAT good. We’ve made chicken tikka masala before and we both liked that version better, though it was much more labor intensive.

If I WAS going to make this again, I would make much less sauce as it seemed almost like an Italian dish with all the red sauce.

Lentil Stew with Butternut Squash

Modifications: We used some sort of orange squash from our CSA, not sure what kind it was, but it was nearly identical to butternut squash inside. Looking over the recipe now I see that we forgot to add the parsley, whoops. Didn’t have any rosemary (and I wasn’t buying any for one recipe) so we used dried thyme and sage, like the song says.

Servings: 6 adult dinners

Annie: Dislike, but had a few bites (turns out she likes it, but ONLY if she sees fresh grated parmesan on top before eating it)

Notes: I haven’t been a big fan of the lentil recipes we’ve tried in the past, so I wasn’t really looking forward to this, other than it used the squash we’ve had sitting around for a couple weeks. To my surprise and delight, this was actually pretty damn good!  We topped it with copious amounts of parmesan cheese and I used sriracha in mine, and it was great. Ours turned out very thick, which is how we like soups anyways, so that worked out well.

Edited to add (from Erin): We gave this soup to Annie for leftovers last night – she took one look at it and got PISSED – saying “nooo” and pushing it away, then saying “cheese? cheese?” pointing at the kitchen (where she’d seen the cheese out earlier). I informed her that there was, in fact, cheese IN the soup, but that wasn’t good enough. She took a little break to have a meltdown about this fact in her room, then she came out and asked for cheese again. In the interest of her eating SOMETHING, we grated fresh parmesan on her soup so she could see it and didn’t mix it in. She then proceeded to eat the entire bowl and ask for more. TODDLERS!!!
