Modifications: I’ve never heard of, nor could we find, tomato powder, so we substituted tomato paste. We used boneless, skinless chicken thighs as well so we didn’t have as much meat as the original recipe called for.

Notes: I wasn’t really excited for this recipe but it surprised me, I really liked it a lot. More than that I liked that it’s very adaptable so you can take this same process and make many different variations. Annie claimed she was done after a few bites, but then shockingly found her appetite again when the grapes were brought out.

Tortellini Salad

Modifications: Since this was a side dish, we left out the chicken. We also doubled this. I didn’t use Newman’s Own dressing, just some generic balsamic.

Servings: I think there were around … oh, 17 adults or something? The single recipe would easily feed 6 I think.

Notes: Everyone really liked this! It felt very summery (as most of the ingredients are freshest in summer obviously) which was a nice change of pace – but obviously this would be better in the summer using actual fresh ingredients. Stuff like basil and tomatoes right now are pretty sad, but I still enjoyed it despite that.

Modifications: We used cod instead of halibut from the recipe because the halibut was over twice the price of cod and we just don’t care that much.

Notes: Erin and I ate this after Annie went to bed as a stay-home-date-dinner 🙂 Sure is easy to forget how laid back a meal can be without a toddler to prep, cajole, and clean up after at the same time. Seriously though, the fish was good, but the highlight of the meal for me was the rice. The recipe doesn’t lie when they say it tastes just like risotto without all the work, it was delicious.

Notes: The prep time is about an hour for this, but the nice thing is that you can make them the night before and just bake them the next day. We had Erin’s family over for dinner and it served all six of us plus Annie and we had enough leftover for Erin and Annie to get another dinner out of it, so it’s certainly a good dish for a crew. We should have used more sauce on top as they were a little dry. This will make a great freezer meal in preparation for baby #2 due in February.

Crockpot Potato Pork Hotdish

Crockpot casserole

Recipe:
1 lb (16 oz) ground pork
2 cupd sliced raw potatoes
1 & 1/2 cups sliced carrots
1 cup chopped celery
1/2 cup chopped onion
1 cup frozen peas
1 cup frozen whole kernel corn
10 oz can tomato soup
1/2 cup water
1 tsp. dried parsley flakes
Salt and Pepper to taste

in a large skillet brown meat, onion, and celery. In a slow crockpot container – sprayed with cooking spray – combine meat mixture, potatoes, carrots, peas, and corn. Stir in tomato soup, water, parsley flakes, salt, and pepper. Mixed well. Cover and cook on low for 6 to 8 hours.

Time to table: 30 minutes prep, 6-8 hours cook time

Modifications: No modifications really, but I didn’t really measure out any of the vegetables, I just added what seemed like an appropriate amount.

Servings: 6 adult servings

Notes: We got this recipe from our neighbor Molly. I thought this was excellent and a great dish for weeknights as its quick enough to throw together before leaving for work in the morning and is reasonably healthy. Erin liked it fine, but wanted some sort of starch or carb to go with it next time. Annie had maybe a single bite. One of those nights.

Cheesy Broccoli Rice Casserole

Cheesy Broccoli and Rice Casserole

Time to table: 45 minutes prep, 30 minutes bake time

Modifications: I steamed the broccoli just using a steamer basket and then chopped it even more because I like tiny pieces of broccoli and it appears Annie does too. Only needed 1 can of cream of mushroom soup. I think our bag of broccoli was maybe 16oz, not 20 but there was still plenty in there.

Servings: This makes a ton – filled a 13×9 pan. I’d say it would easily serve 6-8. We ended up freezing half of it for some other time, and still had enough for a lunch too.

Notes: This was pretty time consuming. Brown rice takes a long time to cook, and making a cheese sauce takes awhile as well. It’s certainly healthier than the original, and wasn’t particularly difficult, but it wasn’t a quick weeknight meal by any means. We did all like it quite a bit, so I found it worth the effort – really any meal that gets Annie to love broccoli is a win in my book.

Pasta with turkey pesto meatballs

Modifications: Not many – I think we probably used nearly double the pesto because that’s what we had frozen, and it still worked out fine.

Servings: 35 little meatballs – we baked half with all the tomato sauce, and froze the other half and half the meatballs served our family of 3 perfectly.

Notes: This was very easy, especially with frozen pesto. The tomato sauce also came together quickly, making this a great weeknight meal. I always love recipes that we can get 2 full meals out of – we froze the meatballs as she indicates in the post, prior to baking so that’ll be an easy one to just pull out and have with more tomato sauce. We served this over spaghetti.

Turkey Pumpkin chili

Pumpkin turkey chili

2 tablespoons extra-virgin olive oil
1 small yellow onion, chopped
1 green bell pepper, cored, seeded and chopped
2 jalapeños, seeded and finely chopped
2 cloves garlic, finely chopped
1 pound ground white or dark meat turkey
1 (14.5-ounce) can diced tomatoes, with their liquid
1 (15-ounce) can pumpkin purée
1 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
Salt and pepper to taste
1 (15-ounce) can kidney beans, rinsed and drained
Heat oil in a large pot over medium high heat. Add onion, bell pepper, jalapeños and garlic and cook, stirring frequently, until tender, about 5 minutes. Add turkey and cook until browned. Add tomatoes, pumpkin, water, chili powder, cumin, salt and pepper and bring to a boil. Reduce heat to medium low and add beans. Cover and simmer, stirring occasionally, for 30 minutes more. Ladle chili into bowls and serve.

Time to table: 30 minutes prep, 30 minutes simmer or 5 hours cook time in a crockpot.

Modifications: We made this earlier in the day and used a crockpot instead of cooking it on the stove.

Notes: We made steamed broccoli and mashed potatoes for our sides and this turned out really good. I liked baking the salmon rather than broiling it, as it takes some guesswork out of cooking. I managed to time the potatoes and broccoli just right as well, so it was all hot when we sat down to eat.
