Modifications: No modifications – I went with Eating for England’s waffle recipe because it included cheese, and why wouldn’t I want that?! I forgot fresh parsley, so just used dried.

Notes: I really loved how easy this meal was! Annie LOVES helping (almost too much) and especially loves helping with waffles. She greatly enjoys watching the light go from orange to green when the waffles are done. This was a super quick weeknight meal (that we made on a weekend, but every meal needs to be quick with a newborn and a toddler right now!). Great for a savory breakfast, or breakfast for dinner. We used our homemade salsa for this.

Mexican Lasagna

Mexican Lasagna

Date: 3/20/2012

Recipe:

1/2 lb of ground turkey
1 28oz can of crushed tomatoes
1 14 oz can of black beans
1 14oz can of kidney beans
1 14oz can of pinto beans
1 diced sweet potato
1/2 packets of taco seasoning (I just threw in some cumin, adobo seasoning from Penzey’s, chili powder, paprika, garlic granules and cayenne)
1/2 an onion, chopped
2 cloves of garlic, chopped
4 cups of shredded mild cheddar
1 packet of Spinach Tortilla wraps

Coat the bottom of a larger, somewhat deep saucepan, with extra-virgin olive oil. Let it warm up (burner on medium heat), then throw in onion and garlic. Sautee for about 2 min. Add ground turkey and cook until no longer pink. Add all the beans and sweet potato and stir. Then add taco seasoning and about 1/2 cup of water (or more if it gets too dry), stir. Finally, add crushed tomatoes.  Lower heat, simmer, and stir occassionally for about 20-25 min.  (Meat and bean mixture cooked the night before, tastes better the next day. But, it’s still good same day : )

To layer ingredients: 1 9×13 inch pan.  Thin layer of meat/bean mixture, tortillas (cut to fit pan), then cheese. Then repeat: meat/beans, tortilla, then cheese.

Bake in 375 degree for aluminum pans, 400 for glass for about 15-25 min. Or until cheese on top is bubbly.

Modifications: I didn’t want such a huge batch, so I made this in a 8×8 pan and froze the other half of the mix.

Time to table: an hour of prep (some is simmering) and 25 minutes baking.

Notes: This is a meal that was brought to our neighbors who also have a new baby, and shared with us. We both loved it so much we had to get the recipe from her friend Karen, who apparently adapted it from a Rachael Ray recipe. I further adapted it from what she sent to include a sweet potato and to reduce the amount of meat. The original also called for corn, but I didn’t have that so did not include. There is another Mexican lasagna recipe on the blog too, but I preferred this one.

Notes: I recently subscribed to the Closet Cooking blog, it’s the only cooking blog I subscribe to and I’ve already got 5-6 recipes of his that I want to make, this being one of them. This soup was absolutely delicious, its hard to go wrong with 1.5 cups of shredded cheese in your soup. On top of that, it’s incredibly easy to make. Will for sure make this again when soup season is upon us next fall!

Notes: We actually had some fontina cheese for this, though we had to cut some mold off of it 🙂 The carmelized onions and mustad were awesome additions to the grilled cheese, I’ll certainly be adding those to grilled cheeses in the future. The tomato soup we had was just so-so, from box at the store. I haven’t mastered the technique to make a grilled cheese that actually melts the cheese in the middle without burning the bread on the outside. Oh well, just more opportunity to try it out!

Chicken chili verde

Modifications: We basically turned this into a chili and didn’t serve it over rice. We added chopped spinach and white beans at the end. For the chicken we used a 1.6 lb package of boneless, skinless thighs. I upped the garlic from one clove to six.

Time to table: 15 minutes prep, 4 hours cook time

Notes: I thought to add the spinach later on in this recipe, then as Erin was looking at it, she remarked that it was odd that it didn’t have any beans in it. Knowing that we had a can of beans in the cupboard, I threw those in too, forgetting it was supposed to be served over rice, so it became more of a chili, but I thought these were great modifications. The only liquid in the dish is from the salsa verde. We topped our with cheese and sour cream and had the remaining beer bread along with it as well. We’ll definitely make this again and I think I’ll add more spinach or another vegetable. This ended up being similar to the white chicken chili we’ve made before, not sure which one I like better.

Notes: This dish fills a 13×9 pan completely and makes a massive amount of food.We had our friends over on Friday to eat this and we barely had half of the pan for four adults and two toddlers. We gave them a meals worth of leftovers and we have ourselves a meals worth of leftovers still, very good bang for the buck

I made this the night before and refrigerated it. Even after 75 minutes this still wasn’t hot in the middle, but it was certainly warm enough to eat. We THINK Annie liked this, but she was so wired from having guests over that she barely ate anything.

Roasted broccoli: Toss broccoli with olive oil, salt, and parmesan cheese. Roast for 20 minutes at 400.

Modifications: We halved this recipe because it was just for us and two chicken breasts is plenty for three of us.

Notes: Erin and I didn’t really like this recipe. We had just picked it because we had fontina cheese and sun dried tomatoes from other recipes to use up, and from that perspective it was a success 🙂 We just gave Annie a plain piece of chicken under the assumption that she wouldn’t like thee stuffing. She enjoyed her bland chicken and broccoli just fine though 🙂

Notes: This was amazingly easy and delicious, hat tip to Bill for making this and twitting about it. I think I’ll be making this frequently as it is SO damn easy. Next time I will either grease up my hands, or use gloves and grease the gloves as it makes a total mess on your hands. I used a honey weiss as my beer and even though the recipe says a hoppy beer didn’t come out as well, I’m going to make this at work soon with a summit, just to see for myself.

Chicken enchiladas

Enchiladas

Recipe:

  • 3 cooked and shredded chicken breasts
  • 2 onions, diced
  • 2 green peppers, diced
  • 3 cans (15 oz) black beans, drained and rinsed
  • 1 T cumin
  • 1 T chili powder
  • 1 T garlic granules
  • 4 cups shredded cheddar cheese
  • ~20 tortillas, the tortillas we used were ~8 inches in diameter
  • 1 can enchilada sauce (28 oz) plus one extra can (14 oz)
Steps:
  1. Cook and shred the chicken
  2. While chicken is cooking, saute the onions and green peppers in oil or butter for a few minutes, adding the cumin, chili powder, and garlic granules for the last 30 seconds
  3. Move vegetables to large mixing bowl.
  4. Add all the black beans to the vegetables
  5. Shred the chicken and add to the black beans and vegetables
  6. Open the smaller can of enchilada sauce and add about half of it to the chicken mixture and stir to combine.
  7. Assemble the enchiladas using the following steps:
  • Spread a thin layer of enchilada sauce on the inside of a tortilla
  • Spoon about 1/4 cup or so of the chicken mixture into the tortilla, spread the mixture into a line
  • Sprinkle some shredded cheese on top of the chicken mixture
  • Wrap the tortilla up and add it to a 13 x 9 pan
  • Continue until you run out of tortillas or chicken mixture
  1. Now, with a full pan of enchiladas, pour the remaining enchilada sauce over the top
  2. Top with more shredded cheese
  3. Bake at 350 for 20 minutes

Time to table: 90 minutes

Servings: 7 dinners (21 enchiladas)

Notes: We made these as part of our freezer meal stash for when the baby arrives and cooked three of them for our dinner tonight, with 18 leftover which we froze in sets of three so we can cook individual meals with them. Adding the cumin, chili powder, and garlic granules to the sauteed vegetables greatly contributed to these being better than I remember them, I don’t normally add any seasonings to the vegetables. We had these topped with sour cream and sriracha (for me) and they were delicious. Annie enjoyed eating the sour cream most of all.

Modifications: I ended up having a ton of gouda, so did not add any additional cheddar. This probably just made it even better, and certainly helped the “smokiness”.

Notes: We all enjoyed this – as Sonja indicates in the recipe, by far the hardest part is peeling and chopping the squash (so it’s not that hard really 🙂 – but if you do that in advance, this all comes together pretty quickly! This is very similar to this recipe – I enjoyed both, but it is nice to skip the roasting squash and baking step if you’re pressed for time!
