Notes: We’re big fans of twice baked potatoes in this house, so I don’t know why it took us so long to try this variation. These were incredibly good, easy, and healthy to boot. They made great leftovers and because of all the extra ingredients  you add to the potato filling, there is enough leftover mix to put inside tortillas for a little variety.

Disappearing Zucchini Orzo

Modifications: I used zucchini and summer squash, and unfortunately we didn’t have any fresh basil left so I just used fresh thyme. I didn’t use as much zucchini as she calls for, just used maybe one very large one – but it was plenty. As usual, more parmesan that is called for. We ate this warm (not cool or room temp as directed)

Notes: We made this several years ago, and I liked it a lot then. Great way to get some veggies into Annie as it is really impossible to pick them out of this one. She didn’t eat a ton, but that is her way lately. Very similar to this dish.

Farfalle with Zucchini and Tomatoes

Farfelle with Zucchini

Modifications: I used zucchini and summer squash, not quite as much veggies as she calls for (maybe 3/4 of an onion, and half a very large zucchini and summer squash, and about a pint of tomatoes). She does not specify an amount of noodles – I used half a box of Farfalle. Thyme and basil were the herbs we had. Did not use arrowroot to thicken the sauce. I also used probably 2 cups of parmesan 🙂

Notes: We made this last summer too and it totally sucked – 3 dislikes.  I had liked it the other several times I’d made it, so I needed to try again. The keys to success of this dish for me are ensuring the zucchini/squash gets browned, as well as the onions – I just left them in the pan without stirring for quite awhile to get them nice and browned, which left lots of tasty bits to get into the sauce. Also, cheese. Just lots and lots of it. And, not too much pasta so that there is enough sauce to coat everything – add the pasta at the end bit by bit so you know you don’t have too much.

We’ve fallen off the meal planning wagon lately (100+ temps and 2 kids don’t make us want to run to the kitchen, apparently) but it felt good to have 4 good meals planned this week. Glad we’ve gotten into enough of a routine with 2 kids now that making dinner doesn’t feel too daunting! We aren’t doing our CSA this summer, so we can just go to the Farmer’s Market on the weekends and get the exact veggies we want/need which is a nice change, although I do miss the variety of the box – but the last few years it got to be a bit too much for us to handle without feeling too stressed, so I’m glad for a break. All the veggies/herbs in this except thyme were from the Farmer’s Market.

Greek Veggie Wrap

Modifications: I used store bought hummus, and balsamic vinaigrette instead of making my own.

Time to table: 10 minutes prep the night before, 5 minutes to prep the wrap that day.

Servings: I just made one wrap, but with the ingredients you can modify it to serve as many as you want.

Notes: Well, as you may have noticed, we haven’t been cooking much lately! We have been making some tried and true favorites, and using some of our freezer meals when the temps are below 90. Lunches are hard for me – if we have leftovers, that’s great, and I sometimes bring in all the fixings for sandwiches and make those for a week or so, but all too often I revert to buying lunch, especially at one of the many new food trucks downtown Minneapolis has to offer. I need to be better about bringing my lunch at least a few days a week for financial reasons, so recipes like this that actually have me EXCITED to eat lunch at my desk are great! This was delicious, and surprisingly very filling – it would be a great hot weather dinner as well.

Notes: You’ll notice that Annie hasn’t “loved” a dish in awhile – she just doesn’t seem as into eating lately, unless it’s ice cream or cookies 🙂 You’d think she’d scarf down waffles, but she is always much more interested in eating the fruit! I thought these were great, especially for being a “healthy” recipe – they still tasted sweet (of course, Ben and I put maple syrup on them – but even without that. We told Annie syrup is medicine and so far she hasn’t demanded it 😉 and I loved the addition of cinnamon. They weren’t as fluffy as other waffle recipes we’ve made, but they still kept their shape pretty well.

Notes: I have a great many friends who have new babies, and wanted to bring a few of them a meal. I originally planned to bring Chicken Wild Rice Soup, but the 80 degree day didn’t seem to call for soup. I gave Kate a few choices, and she chose this! I totally messed up the quinoa the first time, cooking it far too long and forgetting to rinse it. Sorry about that, Kate and Kyle 🙂 The second time, I cooked it in chicken broth and checked it earlier and it turned out MUCH better. There was enough for us to have a dinner of it too, in addition to bringing a pretty large amount to Kate and Kyle. I do like meals like this, but they never seem to actually leave me feeling satisfied. Not enough fat for my liking, I guess!

Modifications: I used ground turkey, black beans, and did not peel the sweet potatoes. I didn’t have tomato sauce, so I just used some crushed tomatoes instead. We use this taco seasoning recipe.

Notes: My friend Chelsea sent me this recipe, and I immediately knew it would be a winner in our house! The best part about these is that you really can prep everything completely beforehand, and then just pop the foil packets in the oven when you’re ready to eat. Ben has an oven at work and was able to bring the extra packets to work the next few days. It is important to layer the packets with the sweet potatoes on the bottom, if they are on top they won’t get cooked through. We served with tortillas and sour cream.

Notes: These are probably my favorite pancakes ever – too bad I am NOT good at flipping pancakes and they somehow all got burned on the outside but not always quite done on the inside. That’s why I like waffles – my waffle maker tells me when it’s done 🙂 These are not exactly quick pancakes since they involve beating egg whites and dirty quite a few dishes… but they are tasty. So it’s not like this is truly a “quick” breakfast for dinner meal, but I guess it’s quicker than a lot of other involved meals.
