Modifications: I knew I wanted a thicker soup, so in addition to the onion, I added:

  • 3 carrots
  • 3 celery stalks
  • 2 small potatoes
  • an extra 2 TB butter
We also topped the soup with green onions, cause why not?

Time to table: 50 minutes

Servings: 4 adults

Notes: We made this soup a couple years ago, and I can say that it was much better with the added vegetables, and healthier I suppose. I cannot express how good this soup was, you should make it youtself and find out. We baked a baguette from New French Bakery and it was awesome, as usual. Amazingly, Annie loved it as well and even asked for seconds (accompanied by a second piece of bread, obviously).

Mini Turkey Meatloaf and Maple Green Beans

Mini Turkey Meatloaf and maple glazed green beans

Modifications: Used a bit more sweet potato than called for, added a grated carrot to the meatloaf mixture.

Time to table: 20 mins prep, an hour bake time

Servings: 4 adults

Luke: Loved chewing on a green bean, had a few bites of meatloaf

Notes: The green beans didn’t seem to get very roasted – they were still pretty crisp despite leaving them in for longer than the recipe said. I think you could put them on the sheet far earlier. I really liked the maple flavor, and Luke LOVED chewing on them a few days in a row.  I also cut up a few red potatoes and tossed in olive oil, salt and pepper and roasted those as well. Ben is still iffy on green beans ever since this little incident.

Broccoli Nuggets

Broccoli Nuggets

1 16-oz  Package frozen broccoli, cooked, drained, and chopped
1 cup whole wheat plain breadcrumbs
1 ½ cups Shredded cheddar cheese
3  Large eggs

Preheat oven to 375
1. Lightly coat a baking sheet with olive oil and set aside.
2. Combine all remaining ingredients and mix well.

*I made some for Annie and added seasonings as well, I kept Luke’s plain

3. Shape mixture into nuggets (I used my small cookie scoop) or fun shapes. Bake for 20 to 25 minutes, turn nuggets over after 15 minutes. Serve warm. Be sure to crumble these if your baby needs.

Modifications: None

Time to table: 5 minutes prep, 25 minutes bake time

Servings: This made quite a bit – I froze a big bag of them.

Annie: Love – and she especially loved that I made an “A for Annie” 🙂 Weirdly, broccoli is probably her favorite vegetable.

Luke: Love (but he’s at the age where he basically loves anything he can pick up and shove in his mouth)

Notes: Check the original link for suggestions to avoid eggs if that’s something you’re doing. I have made baby food for both Annie and Luke and REALLY love it. I didn’t make a ton for either kid and pretty quickly went to just giving them what we were eating (or in Annie’s case early on, just gave her leftovers since we used to eat after she went to bed). Luke is not a fan of purees, so these are great for him if we don’t want to give him what we’re eating that night for whatever reason.

“Witches Brew” Cheesy Spinach Soup and Monster Sandwiches

Modifications: Pretty much just followed the recipe – I think we used one more potato than the recipe called for in the soup.

Time to table: 20 mins prep, 15 minutes simmering

Servings: 4 adults (for the soup)

Ben: Dislike – he wasn’t feeling the very very strong gruyere tonight, and he was a spoilsport and just made a “normal” sandwich 😉

Annie: Like – definitely enjoyed making the sandwich!

Notes: Seemed like an appropriate, healthy and quick meal for Halloween before trick-or-treating! These open faced sandwiches are really fun for kids to make. It didn’t make Annie want to eat the veggies any more than normal – she just wanted the cheese and meat. She does really seem to like broccoli, so she ate that but she still isn’t a fan of peppers! The soup came together really quickly, and although the gruyere we got seemed a bit more pungent than normal, I still enjoyed it and so did Annie. Ben finished his but wasn’t a fan of the flavor of the cheese.

Spinach Artichoke Pasta

Modifications: I halved the recipe to fit in an 8×8 pan, and then did bake it for a bit because I wanted to.

Notes: I am a big fan of spinach artichoke dip, so I knew I’d love this dish. It’s actually pretty easy so it made a good weeknight meal. I think I’d like the cream cheese in there but it might push it over the edge into the uncomfortably rich category that Pioneer Woman recipes sometimes are…

Notes: These were excellent! They didn’t have any sauce on the inside of the enchilada as we’re accustomed to but I put in plenty of cheese. Not having sauce inside saves time on assembling them as well. I loved using salsa verde as the sauce too, instead of red enchilada sauce. Definitely going to be making these again!

Modifications:  Did not add red pepper flakes. Just used one onion, didn’t measure out 3 cups. Probably didn’t have quite 2 cups of mozzarella since we had to borrow it from our neighbor’s but it was still plenty cheesy – I added more parmesan to compensate. I made the noodles separately since I knew we’d have leftovers and I wanted them to stay firm.

Time to table: About an hour in total, 30 minutes of simmer time.

Servings: 6 adult servings

Ben: Like (only at a “like” instead of love due to his hatred for chunks of tomatoes)

Erin: Love

Annie: Like (mostly enjoyed the noodles)

Notes: When we first had Luke, our friend Maggie brought us this to enjoy and it was DELICIOUS. I asked her for the recipe and have been waiting for it to get cold so we could have it again! I was sad to not be able to find mafalda noodles, but the ones we had were fine. This is such a tasty soup, even better enjoyed with a take and bake baguette from New French Bakery, thanks to my father-in-law for showing us just how delicious those are – we now have a dozen in our freezer, cut in half and wrapped in foil ready to pop in the oven for a meal for us 🙂

Chicken Tamale Pie

Modifications:  Used regular milk, an egg (not egg substitute) and a can of regular (not creamed) corn. May have used slightly more than 8oz of corn muffin mix since I eyeballed it. Used chicken thighs instead of breasts. Used cheddar cheese. Forgot to add taco seasoning to the chicken. Did I even make this recipe?? 🙂 Ha, I still think it was pretty similar at least!

Time to table: About an hour in total, would go faster if you had the chicken ready in advance. 20 minutes is to bake the corn mix.

Servings: Exactly served 4 adults and 1 toddler.

Notes: Probably due to my “modifications”, the corn crust was a little more done than she indicates in the original post, but I liked it that way.

Pumpkin Waffles

Modifications:  A little bit of my egg yolk got in with my whites, so I had to throw a few away (they don’t beat up if any part of the yolk is in there) so I only had 3 egg whites. We never have buttermilk, so as usual I used milk with about a tablespoon of vinegar and let it sit for a few minutes.

Time to table: In total, it felt like nearly an hour. Much like these pancakes, these dirty up 3 separate bowls, and you have to beat egg whites. It does make for a great finished product, though! The waffles are much fluffier with a bit of a crisp exterior when the egg whites are beaten separately.

Servings: Served 3 of us and we had a few to put in the freezer.

Notes: I added Luke as a rater for this one 🙂 He has had a few pieces of these to chew on straight from the freezer, which bought us an ENTIRE DINNER of silence – AMAZING. I will for sure be making many more waffles for him now 🙂
