Modifications:  I used a few more vegetables and a little less salt than the original recipe called for. Also left out the mushrooms, cause yeah.

Time to table: 30 minutes prep, 2 hours simmer time

Servings: Two family dinners

Notes: This was delicious with mashed potatoes, for some reason Luke didn’t like it either night we had it. Too bad for him, cause Mom and Dad liked it, so we’re definitely having it again!

    This was awesome. I made it last Friday, my husband came home from work and was flat out giddy to find it simmering on the stove. Neither of my kids will eat mashed potatoes (seriously, what is wrong with them?) but Louie liked it when I mixed it with some leftover rice we had in the fridge. Gus ate two pieces of meat and said it was good, but then asked for a PB&J. 😉
